Like the ones at the Cheesecake Factory!
Makes 6 rolls and lots of sauce!
Sauce:
1/2 cup honey
2 limes juice
2/3 cup cilantro
2 cloves garlic
1 Tbsp fresh ginger
2 Tbsp vinegar
salt & pepper
1/4 cup cashews (optional)
Mix in a blender. Let it sit for a few hours so the flavors take to eachother.
Rolls:
2 Avocados
2 Tbsp Sun Dried Tomato
½ Red Onion, chopped
2 Tbsp cilantro
salt
Eggroll wraps
1 beaten eggs (for sealing wraps)
Mix avocados, tomatoes, onion, cilantro and salt. Place about a 1/2 cup of mixture in an egg roll. Follow egg roll pkg directions for folding and sealing.
Fry rolls until golden brown. Be careful not to fry them for too long.
Cut rolls in half in a diagonal. Serve with the sauce for dipping.
